I’m thankful today for so many things….and just being with family is such a treat and blessing.
I could probably write a book on blessings, recognizing them and appreciating them.
Instead I’ll just record on this blog that I am thankful for so much.
I’m thankful, also, for YOU.
Yes, YOU.
Without YOU I would not be afforded the opportunity to write, this thing I love and have dreamed of since I was a little girl.
I wouldn’t have the guts to be creative when it seems kinda crazy.
I wouldn’t have gotten to meet so many incredible and talented women (and men) out there…and been blessed by that talent and kindness.
And I certainly wouldn’t have taken pictures of myself making Sweet Potato Casserole.

I realize it’s a little late for Thanksgiving, but hey, Christmas is right around the corner, right?
Ingredients: (this is for one serving and fyi, I usually double to make a deep dish 13 x 9.)
3 cups mashed sweet potatoes
1 cup sugar (yes, 1 to 3 ratio 🙂
1/2 cup butter
2 eggs, slightly beaten
1/3 cup evaporated milk
1 tsp. vanilla
Bake your sweet potatoes in the oven…lower temp, longer time is better.  I bake mine at 300 for 2 or 3 hours.  Southern Tip: If at all possible, sit your potatoes out in the sun a day or two before…this will bring out their natural sweetness.  Yes, it works! 

Ooh, I forgot to mention…poke holes in your potatoes…this is a good sign when the oozing begins. 🙂

It’s best to mash or beat your potatoes while they’re still warm after removing them from the oven.  Beat them at medium speed for a few minutes until smooth.

Add your sugar first while the potatoes are still hot…it will blend much better.

Now’s the time to add the butter.  All 18 slices.

This is usually where I get lazy and dump the rest of the ingredients in.  Beat it all on medium speed for a few minutes until light and fluffy.

Pour it up into your pan.  
Don’t judge the aluminum.
This casserole had to make it 5 hours in the car yesterday.
I waited to make my topping until we got here.
1 cup brown sugar
1 cup chopped nuts
1/2 cup plain flour
1/3 cup melted butter
Be sure to mix the dry ingredients all together before adding the butter.

Pour your topping over your casserole, pop in the oven at 325 for 45-60 minutes.
Simple, yummy, and artery clogging.
